So long as you are making sure to press the base down firmly so there are no gaps and prebaking it, it should *not* be physically possible for the lemon topping to sink through. All the lemon topping has gone underneath the base so there is a biscuit layer on top then the baking paper then the lemon! I'm not sure what I've done wrong. Is it because I have gaps in baking paper? I also didn't have a tin and used a glass pyrex dish similar size? It still tastes great but had to get it out take off paper then scoop lemon and smear it back on! Hi,

Baked it in a 9"x9" cake tin and there were plenty to go around.
