I think its "Hong-Er Hwae Bibim NangMyon" *^^* It would be very difficult to get Stingray (not fresh stingray. Fermented stingray is used in this dish) here in Australia so I recommend Fish cake (brand Hokka...cheaper alternative :-) ). Better way would be to use any other fresh raw fish (sashimi) cut into small dice like squares. Tuna or King fish works pretty well. "Cook fish" is not appropriate because it's too soft and would break apart when mixing the noodle with the chilli sauce (also the cooked fish kills the fresh clean taste of the noodle so not recommended). Any raw fish or even very fresh squid cut into long thin slices is great (always remember when eating raw fish, it HAS TO BE FRESH!!..fresh enough to be served as sashimi or susi. Please do not use any raw fish you buy at the fish market thats not susi material).

Enjoy ^^
Cheers

I would say skate or even flathead, but I can't say for sure what this dish was - it would help if you could give me a bit more detail about the flavour and what else was in the dish and I can speak to my family and see if anyone knows what it is?
