I love pancakes - their light, delicate texture, warm out of the pan drizzled with maple syrup and topped with fresh fruit, they make a completely decadant breakfast. Unfortunately, the only people who eat pancakes/pikelets/crepes in my house are myself and my brother, so I don’t make them very often.

They’re not fancy, there’s no buttermilk, no berries, no butter - but they taste lovely and fluffy and make a very quick and easy breakfast!

Ingredients

4 tbsp sugar
1 egg
1 cup self-raising flour
3/4 cup milk
1/4 tsp bicarb soda
2 tsp vanilla essence

1. Mix together sugar and egg, beat till combined. Add vanilla and beat again.

2. Beat in flour and combined milk and bicarb soda, alternating between both. Beat till smooth.

3. Drop spoonfuls onto a hot, buttered pan, cook till bubbles begin to appear, then flip and cook for about 1 minute.

Serve with cream, maple syrup and fresh fruit. This makes a wonderfully quick breakfast for two :)

Pancakes are my all-time favorite breakfast food.. I love them sweet and/or savory.. on the light and fluffy side or the more heavy and dense side.. I haven’t met a pancake that I haven’t lurved. Have you ever had a pancake with a thin layer of peanut butter spread across it and then a drizzle of good maple syrup on top? Yum! :D

And I am all done commenting now. My gawd, woman. Most of us lay in bed or in front of the TV wallowing in our sickly cooties whilst ill. You cook! How did you muster up so much energy?? I’m exhausted from reading all of your posts and I’m not even sick! Well, regardless (yes I’m looking at you kind of strangely right now - but in a good strangely way, of course) I’m relieved that you are feeling better and on the road to recovery *hugs* :D

Oooo, can’t say I’ve tried peanut butter on them, but it’ll definetely be one to try! I love peanut butter so much I even have a pasta sauce that I make with it :D

I’m used to being a busy person (working, studying, walking Mr. Woofy, going out, cooking, cleaning etc) so being sick doesn’t agree with me very much as I get extremely frustrated with my inability to do things. If it’s any consolation - after I finished each of those, I returned to bed to wallow for a few hours ;)

Oh, by the way - another brill way to try pikelets/pancakes is to sprinkle a little granulated sugar over the top, then a generous squeeze of lemon juice! Roll it up and munch away, the lemon juice soaks into the pancake and the sugar helps to offset possible tartness! Woo!

Hi Ivonne - they’re nowhere near as beautiful as your divine blueberry buttermilk pancakes (which I’m eager to try…as soon as I find some buttermilk!) but I’m glad you like ‘em anyway :D

Love the idea of sugar and lemon.. especially of just rolling them up and munching! Will DEFINITELY try the next time I whip ‘em up :D

It’s pretty awesome! :) If you’re a fan of ‘crunching’ as much as I am, then go for a granulated sugar - raw/demerara/coffee sugar crystals are good for this :D

After finding my kitchen again, I finally tried them…..yum! Any recipe that starts with “Quick” is ok by me….
