“…” (too tired for words)
Oy, what a DAY!
Didn’t get out of bed till 7am this morning as I decided that 6am was too early a start when I’d been studying till 1:30am in the morning…took my time getting ready, and then left to catch the tram to uni. Now, this is usually a 45-minute trip, but today took 2 hours as every car in the WORLD suddenly decided to drive in front of my tram. All at the same time.

Eventually got to uni and was accosted by a man dressed as a giant coffee bean.

Finally managed to get to class and a consultation with my lecturer about the group assignment (which is sort of fine now, though the work still needs to be done). On my way home, I fell asleep and dreamt of pigs frolicking in apple orchards, so the decision was made that tonight, dinner would be a pork roast (and my attempt at Lisa’s gnocchi has been rescheduled for the weekend.)
So, I’ve currently got a deboned loin of pork roasting in the oven, seasoned the underside with rosemary, garlic and pepper and wrapped around 3 skinned, cored and chopped apples. Along with the roast is some celery, onion, carrot, sweet and regular potato and some pumpkin (but don’t worry, I’m not going to explode as I’m fortunate enough to live in a family of 6, 3 of whom are still ravenous teenagers). The butcher was also kind enough to give me treaties for Mr. Woofy…

how the crud do you buy 1/2 a pig? Was it a big pig? Was it wilbur? Oooer, did you get some pork belly as well? It’s one of my favourite parts, and so versatile!
I can’t think of why it wouldn’t work in a crock pot…with some tweaking to your taste
I don’t know if you’ll have it available at this time of year, but fennel (if you’re a fan) adds quite a bit to this…I didn’t get any, as the only fennel they had at the greengrocers were scarred, wilty and generally very sad. Weepy things, I offered them a hanky but they preferred sooking in their wooden crate. C’est la vie!
If you’re planning on crock potting, I’d say probably cook onion, carrot, celery (and fennel) with the pork, with whole garlic as opposed to the mush I used for mine. In that heat you don’t want the oven on, so maybe boil the taters for a mash (with garlic, sour cream and spring/green onion!), and steam the pumpkin?
As for Mr. Woofy and his bone…would you believe that bone is half eaten? I kid you not, it was TWICE as big when I first gave it to him. Of course, I thought it was quite funny that his bone was bigger than his head, so I tried to make him wear it as a hat, but he let me know he wasn’t having any of THAT, thankyewverymuch! HAH!

Your pork loin dinner sounds wonderful. Before hubbs left for this freaking out of state job, we bought 1/2 a pig (holy crap that’s a lotta pig!) and I’ve got tenderloins just waiting to be made when he gets home. He loves his veggies (as do I) and the apples really make it sound super good! Do you think this would work well in a crock pot? Maybe if I seared the pork first and then let it finish slow cooking all day? Since we found out he won’t be home now until mid June (GAH!!) I’m trying to think of a way to make this delicious dinner without keeping my oven on in the heat of June. Your thoughts? =)
